Dal 2018 è professore ordinario di Microbiologia agraria, presso il Dipartimento di Agricoltura, Alimentazione e Ambiente (Di3A) dell'Università degli Studi di Catania (UNICT) e dal 7 aprile 2023 presidente del Consorzio per la Ricerca nel settore della Filiera Lattiero Casearia e dell’agroalimentare – CoRFiLaC, rinnovata per il qudriennio successive il 31/03/2025.
Dal 2001 è coinvolta in attività accademiche e di ricerca nel campo della microbiologia alimentare. Dal 2001 è docente per i corsi di laurea triennali e magistrali in Scienze e Tecnologie Alimentari, Scienze e Tecnologie Agrarie e Biotecnologie Agrarie. Dal 2001 è membro di Collegio di Dottorato ed è stata relatore di 13 tesi di dottorato.
È responsabile scientifico di numerosi progetti di ricerca con aziende locali, nazionali e internazionali e collabora con numerosi centri di ricerca e Università in Italia e all'estero.
È stata Vice-presidente (2018-2021) della Società Scientifica Italiana di Microbiologia Agroalimentare e Ambientale (SIMTREA), dal 2009 è stata membro dell'Osservatorio della Didattica, e dal 2016 al 2021 membro del Consiglio Direttivo. È stata Segretario del Coordinamento nazione dei Corsi di Studio in Scienze e Tecnologie Alimentari (COSTAL) e, dal 2014, membro del Panel per la Prova delle Competenze Disciplinari (TECO-D), Settore Alimentare, Area Scienze Agrarie. E’ stata coordinatrice nazionale del Global Food Microbiology Teachers Network.
E’ iscritta all'Albo degli Esperti Scientifici REPRISE (Miur) per le sezioni: ricerca di base; ricerca industriale. E' stata revisore VQR 2011-2014 per conto dell'ANVUR (GEV 02.05, 06, 07), valutatore esterno per progetti di assegni di ricerca di diverse università italiane; è iscritta all'Albo ANVUR degli Esperti Disciplinari per la valutazione dei corsi di studio dell'area delle scienze agrarie.

Dal 2016 è inserita, in qualità di Esperto Tematico Agroalimentare, nell'Elenco degli Esperti in Strategia Regionale di Specializzazione Intelligente, della Regione Siciliana.
È stata valutatore di progetti PRIN, FIRB, SIR e ha fatto parte dell'Albo Esperti del CIVR per l'Esercizio di Valutazione Nazionale della Ricerca (VTR), organizzato dal Comitato di Indirizzo per la Valutazione della Ricerca (CIVR).
Da gennaio 2021 è membro del Centro di Ricerca sulle Nanotecnologie Oculari NANO-i, presso il Dipartimento di Scienze Farmaceutiche e della Salute, dell'Università degli Studi di Catania. Nel 2021 è stata docente proponente per il CENTRO INTERDIPARTIMENTALE DI RICERCA IN NUTRACEUTICA E PRODOTTI DELLA SALUTE, presso il Dipartimento di Scienze Farmaceutiche e della Salute dell'Università degli Studi di Catania. Main research lines
Cinzia’s scientific activity is carried out in the food microbiology field; in particular she focuses her study on the microbiology of fermented foods. Her research subjects concern the selection and the taxonomic study of microorganisms, above all lactic acid bacteria, acetic acid bacteria, yeasts and pathogens involved in the production of several natural fermented foods. Negative aspects (such as spoilage, diseases) of microorganisms are also studied as well as positive health effects of (probiotic) microorganisms and the production of antimicrobial compounds (bacteriocins) are the main topics of her research.
The research activity is conducted in the field of food microbiology, with particular regard to microbiological safety, the study of the dynamism of the microbial population, the selection of strains of biotechnological interest. In particular, foods of plant origin, including table olives and foods of animal origin, including traditional and non-traditional cheeses, are of interest to study. Further research topics concern the study of the probiotic characteristics of strains isolated from food matrices for the development of innovative foods and / or functional drinks starting also from by-products of the agro-food industries. Recent research activities are aimed at the study of the vaginal microbiota, the spread of antibiotic resistance, in strains of the genus Enterococcus and Escherichia coli isolated from both environmental and food matrices and the enhancement of the by-products of the oil industry. fermented (cheeses, table olives, sourdoughs, wine, etc).Microbial population in fermented foods (eg cheese, table olive, sourdough, wine etc): isolation of lactic acid bacteria, acetic acid bacteria and yeasts; phenotypic and genotypic characterization of micro-organisms
