Alessandro Priolo graduated with honours (110/110 cum laude) in Agricultural Sciences and subsequently obtained a PhD in Animal Science through a joint doctoral programme between the University of Bari and the University of Catania (Italy). His doctoral research focused on the effects of nutrition on meat quality and culminated in the dissertation “The Effects of Condensed Tannins in Carob Pulp on Lamb Growth and Carcass and Meat Quality.” During his PhD studies, he spent eight months at MIRINZ (Hamilton, New Zealand), further developing his expertise in animal nutrition and meat science.

In 2000, he led a research project in France investigating the effects of grass-based feeding systems on meat quality. He joined the University of Catania as Researcher in Applied Animal Science (AGR/19) in 2002, became Associate Professor in 2006, and has been Full Professor of Animal Nutrition (AGR/18) since 2011.

Alessandro Priolo’s research focuses on animal nutrition, quality of animal-derived foods, sustainable feeding systems, and the relationships between livestock production, food quality, and consumer perception. He has authored more than 100 scientific publications, most of them in leading international peer-reviewed journals, and is co-inventor of an international patent concerning a method for tracing grass-feeding systems in meat products. His scientific achievements have led to numerous invitations as keynote speaker and session chair at international conferences.

He has served as Associate Editor of the journals Animal and the Italian Journal of Animal Science and acts as reviewer for several international journals in the fields of animal and food sciences. He has also been appointed as an expert by the United Nations within a joint programme of the Food and Agriculture Organization (FAO) and the International Atomic Energy Agency (IAEA). Throughout his career, he has served on several national and international research evaluation panels and has been repeatedly invited to assess research proposals and funding programmes in different countries, including projects submitted under the European Union Framework Programmes and Horizon Europe.

At the University of Catania, Alessandro Priolo has held several academic leadership positions, including President of the Degree Programme in Agricultural Sciences and Coordinator of the PhD Programme in Agricultural, Food and Environmental Sciences. He is fluent in Italian, English, French, and Spanish.

As of May 2026, his publications have received approximately 7,000 citations in the Scopus database, and his h-index is 47.
