WATER MANAGEMENT IN BUILDINGS FOR FODD AND WINE INDUSTRY

Expected Learning Outcomes

Acquisition of the main knowledge on issues related to water management aimed at their use in food and wine contexts. The student will acquire knowledge about the main sources of water supply and drinking water processes. 

In addition, knowledge will be acquired on issues related to the recovery, treatment using natural systems, and reuse of wastewater produced by production processes. Finally, the reference regulatory framework on water intended for human consumption, discharge and reuse of treated wastewater will be discussed, including the main parameters to be monitored and the relative acceptability limits.

Course Structure

Lectures and exercises (classroom, seminars and technical visits). If the teaching is given in mixed or distance mode, eventual variations can be introduced in order to comply with the program foreseen and reported in the syllabus.

Characteristics of water intended for human consumption

Sources and classification of water resources. Quality characteristics of drinking water: physical, chemical and microbiological parameters. Water supply systems for drinking use and related drinking water treatment techniques. Legislation on the quality of water intended for human consumption.

Characteristics of wastewater

Quali-quantitative characteristics of wastewater (with specific attention to food and wine). Wastewater collection systems. Regulations for the discharge and treatment of wastewater.

Treatment and disposal methods

Main concepts on conventional treatments. Natural wastewater treatments: constructed wetlands, lagooning and storage tanks.

Technological aspects of wastewater irrigation. Illustration of case studies on disposal and reuse of purified wastewater with extensive techniques. Regulations for the reuse of wastewater.

Learning Assessment

Learning Assessment Procedures

Students will take a written test at the end of the course. For those who do not pass it, or at the request of the examiner, a recovery test is provided in the form of an oral exam. In this case, the grade reached will be the arithmetic average of the marks of the two tests. The verification of learning can also be carried out electronically, if the conditions should require it.
