The Food Technology Laboratory is equipped with pilot-scale plant and equipment for food production, processing and preservation, and provides a facility for practical sessions for all students on degree programmes under the Di3A. The activities that can be carried out range from the evaluation and optimisation of food formulations to the study of interactions between innovative ingredients, and their effects on the structural, rheological and sensory properties of finished products, including the sustainability and functionality of packaging.
