The Food Technology Laboratory is located in the basement of the University building, in via Santa Sofia 98.

The Laboratory of Food Technologies has all the necessary equipment for chemical physical and nutritional analysis and functional characterization of various food matrices; purification and characterization of enzymatic activities and their role in the shelf-life evaluation of foods.

The present instrumentation is composed of: refrigerated centrifuge, mass spectrophotometer, UV-VIS spectrophotometer, mineralizer / digester, steam current distiller, packaging machine, viscometer, vapor sorption analyzer, hydrogen generator, HPLC, gas-chromatograph, texturometer, fluorometer, vortex, vacuum pump, automatic titrator, ultrafiltration system, Econo UV monitor, thermostatic bath, vertical laminar flow hood, refrigerator; freezer (-20 °C); analytical balance, semi-analytical balance, moisture analyzer, 3 heating magnetic stirrers.
